Apple Cinnamon Crepe Filling
Apples, sugar, cinnamon…oh my! Eating these crepes is like having apple pie for breakfast, and what’s better than that? This warm indulgence will bring back the memories of family holidays, and maybe you’ll introduce it at your next dorm room gathering. The best part about this recipe is how simple it is, only three ingredients! When your friends ask for more, it won’t be hard to whip these up. .
Ingredients (makes 4 servings)
3 large apples, cored and peeled
3 tablespoons brown sugar
1 teaspoon cinnamon
Directions
- Chop apples into small cubes placing cubed apple slices in a medium bowl.
- Add brown sugar and cinnamon, and toss everything together to coat chopped apples.
- Let the juices do their work for about 20 minutes, and in the meantime prepare crepes.
- When crepes are finished , heat chopped apples on medium heat in a skillet, and warm the crepes in a microwave for about 20 seconds.
- To serve, add chopped apples on top of the open crepe, and fold the crepe into a pocket shape. Sprinkle with powdered sugar right before serving, if desired.
Homemade Apple Cider
It’s time to get wild! Surprise your friends with this homemade cocktail recipe. It’s the original fall drink, apple cider, but with a twist. . Of course, if you are not yet 21, there is a non-alcoholic version of this cider. Either way you make it, you’ll soon be the star of every holiday party.
Ingredients (makes 5 cups cider)
10-12 apples, cut into fours without core
1/2 cup sugar, or if you want it less sweet just 1/4 cup
6 cinnamon sticks or 1 tablespoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon cloves
8 cups water (or enough to fill the pot a few inches above the apples)
Directions
- Place apples in a large stockpot with water. Stir in the sugar, spices and add in the cinnamon sticks. Bring to a boil for 1 hour. Then cover and simmer for another hour.
- Place a strainer over a large bowl and pour the mixture in the strainer. Discard the apples. Strain the cider again through a cheesecloth by placing it over a bowl. This will ensure all chunks from the apples are removed.
- Pour into a glass pitcher and refrigerate.
Cocktail Directions
- Fill an 8 oz. glass to the top with ice.
- Pour 1 shot of any Core Vodka made from applesor your favorite vodka over the ice, just try to avoid using fake “apple-flavored” vodka. Fill the rest of the glass with the cider and mix ingredients.
- Garnish your cocktail with a cinnamon stick and an apple slice, and then enjoy!
Chocolate Dipped Pears with Almond Crunch
Have a sweet tooth but want to stay on the healthy side? Try this Chocolate Dipped Pear and Almond Crunch recipe. You get your fruit (pear), protein (almonds) and a heart boost (dark chocolate). This sweet and salty combination is the perfect autumn mix. Plus, they look adorable!
6 medium size red Bartlett pears
8 oz. dark chocolate, melted
4-5 oz. salted almonds, chopped
Directions
- Place melted chocolate in one bowl and the chopped almonds in a second bowl.
- Dip room temperature pears in chocolate, then in almonds.
- Place dipped pears on a cooling rack to set. Once the chocolate is hard, the treats are ready to be served.
